Dragon Fruit

Dragon fruit, also known as pitaya, is a type of cactus that produces large, climbing vines or epiphytic stems. The plant can grow up to 20 feet long, and produces bright pink or yellowish-green blooms that are pollinated by nocturnal insects such as bats and moths. The fruit itself is oval-shaped, with a tough, scaly outer skin that ranges in color from pink to yellow to red, depending on the variety. The edible inner flesh is white with black seeds, and has a mild, slightly sweet flavor that is often compared to a cross between a kiwi and a pear. Dragon fruit is a popular superfood due to its high content of antioxidants, vitamin C, and fiber.
